1 Scope
This part of GB/T 9695 specifies the method for determining the vitamin C content of meat products.

2 Principle The vitamin C in the sample is extracted with metaphosphoric acid, oxidized to dehydrogenated vitamin C by 2,6-dichloroindophenol, and reacted with o-phenylenediamine to form a quinoxaline derivative having violet-blue fluorescence. The fluorescence intensity was measured at an excitation wavelength of 350 nm and an emission wavelength of 430 nm, and quantified by a standard curve method.
Dehydrogenated vitamin C and boric acid form a complex without reacting with o-phenylenediamine, thereby eliminating interference from fluorescent impurities in the sample.
